The kitchen of Ortoalpino: the productive excellence of poultry, vegetables, eggs, cultivated and wild fruit, and the skillful transformations into preserves, pickles, agrodolce, jams, and liquors ensure that the company has an abundance of KM0 products, chemical-free, throughout the year, elaborated according to the best traditional recipes derived from continuous bibliographic research as well as from the alpine and landowner traditions of the 19th and 20th centuries. Moreover, the symbiosis with the territory often allows us to have game, fish, and river shrimp, mushrooms of all kinds, wild herbs, and wild fruit at our disposal. For example, jams made from Hawthorn, Cornelian cherry, Blackthorn, dog rose, and Elderberry, which are not only hard to find but of which ordinary people are even unaware of their existence. Well, all of this is available to our guests and to those capable of appreciating its uniqueness and refinement. We periodically organize thematic lunches or dinners where the protagonist is one or more chosen products (deer, goose, rabbit, beans, pork, etc.) obviously cooked slowly, with only the aromas of tradition, enjoyed in a room with antique furnishings and in the tranquility of an event organized solely for enthusiasts.
